On this nasty wet and cold day I decided to make Ricotta with my Mom. If you have never had homemade warm Ricotta, let me help change your life... So here's how it goes.. You will need: 9 cups of Milk (Fresh Whole Milk) 4 cups of Heavy Cream 4 Tbl spoons plus 2 Tsp White Vinegar 1 1/2 Tsp of Salt (A nice glass of wine!)
Combine all of the ingredients (not the wine) into a large pot on medium heat, give it a quick stir.. Grab that wine! Allow the mixture to slowly come to a simmer. Let simmer for about 2 minutes. Time to drink that wine!
Line a colander with Cheese Cloth. Place the colander over a large bowl. Carefully pour the mixture into the Cheese Cloth. Fold the corners of the Cheese Cloth over the Ricotta and allow to rest for 15 to 20 minutes to allow the remaining whey to drip into bowl.
Spoon the fresh Ricotta onto a plate and dust with fresh Tellecherry Pepper, if you like, drizzle with Olive Oil, Enjoy! ... See MoreSee Less
